This morning as I ate my pre-contest style breakfast after a great morning cardio session I said to myself; " I just had to share this easy and simple recipe with those needing a: great tasting, mix-it-up, lean-n-clean, health packed power breakfast!"

*WOW  these are:

*Wheat free         *Dairy free                 *Guilt free                           "Protein packed w/ Complex carbohydrates"

*Gluten free         *No sugar added       *Omeaga-3 enriched           "Fat burning"                *Controls blood sugar

1/2 cup freeze dried blueberries

1/3 cup Quinoa Flakes

7 egg whites + 1 Omega-3 enriched egg

2 packets Stevia (sugar-blood stabilizing sweetener)

1) Mix/whip all ingredients in a bowl with a fork until blended together for pouring into an omelet pan.

2) Pre-heat stove top after spraying pan with olive oil cooking spray

3) Once the oils spray is noticeably hot pour all of the mixture into the cooking pan.

4) Allow the ingredients to sit in the hot set pan for about 3-4 min and then cover the top of the pan with another cooking pan to keep the steam in and create a fluffier result.

5) Once the pan is placed on top of the other set the temperature down to low on the stove top and let sit another 2-3 min.

6) Flip the omelet/pancake over once and return the top pan while turning the stove top off.

7) Allow the omelet/pancake to remain cover for 3-4 min with the stove off before removing the top pan and letting to cool.

**Eat hot after cooled down --OR-- Enjoy a great cold treat later in the day or next day.

**You can add spices to the top of the finished product: cinnamon, apple pie spice or pumpkin pie spice, or extra Stevia packets for sweeter taste.

Alert:  Blood type O's not advised to use the spices as they are warming internal spices which can cause inflammation and can cause sluggishness or sensitivities.
